Zeynep TACER CABA, PhD.
Zeynep Tacer Caba, PhD. is an Assistant Professor at Bahcesehir University (BAU) Department of Gastronomy and Culinary Arts.
She has a PhD. degree in food engineering and has been worked as a researcher, lecturer and supervisor in different areas of food science and engineering, for more than 15 years. She has been involved in numerous national and international research and industry projects. Her research areas are food chemistry, cereals, sustainable food solutions, analysis bioactive compounds in foods, edible coatings and sensory properties of foods. She was responsible for project coordination and student supervising for two years in EIT Food Education projects of Food Solutions Master at University of Helsinki. She also conducted research as post-doctoral researcher. She has published in refereed international scientific journals, book chapters (invited) and many other papers in congress proceedings.
